Lemon Cheese Cake

A stunning and gorgeous lady blogger dropped a surprise visit to our office a week before Chinese New Year.

She prepared so many goodies for Yan, Angeline and I; one of it was a bottle of homemade lemon curb. Thanks again, Lena!
 
This is my maiden exposure to lemon curb and I had spreaded it on bread and tortoise bun (mee-ku). I even bake a cake with it :D
 
Lemon cheese cake
Recipe adapted from here (I made slight modification).
What you need:
150g oreo cookies crumbs
80g butter, melted
3 eggs, lightly beaten
1/2 cup caster sugar
3 x 250g cream cheese, softened
1 tsp grated lemon rind
1/8 cup lemon juice

Make It!
  1. Lightly grease a 22 cm springform tin. Preheat oven to 160°C (non fan-forced).
  2. Combine biscuit crumb and butter in a bowl.
  3. Using a glass, press crumb mixture evenly over base and side of tin.
  4. Refrigerate biscuit crust for 1 hour or until set.
  5. Beat sugar and eggs in a bowl with an electric mixer until pale and thick.
  6. Add cheese, rind and lemon juice. Beat until mixture is smooth and creamy.
  7. Pour mixture into prepared tin and bake for 45 minutes (I baked for 55 minutes).
  8. Cool in oven with door ajar.
  9. Decorate with lemon curb.
  10. Refrigerate for several hours or overnight.

My kids don't like the lemony taste but I have no problem 'feeding' my colleagues and even got positive feedback from them.

Will I bake this again? Sure!! But I must learn how to make lemon curb first~

      Home baked cake definitely better than those you buy outside. Because it is baked with love.

    3. Keep up baking, though I mentioned that I am on diet, one slice a day won't do any harm on my diet plan. I will burn it away with another half an hour jog on treadmill.

  2. I love almost every type of Cheese Cakes. I guess I love cheese so any added flavour is a bonus! The latest Secret Recipe's Durian Cheese Cake is heavenly nice. Lemon Durian lagi bagus!

  4. I made the first Cheese Cakes when I was just in secondary school. It was always a flop cos they had to be frozen in the freezer and it could just taste like ice cream. I had to use Marie biscuits for the base and Oreo was unheard of. I still enjoyed my own cheese cake as they were not availanle in the shops then.

Ah Hua quick quick learn to make lemon curd from Lena lah.. then you can use the lemon curd for many things, in baking or with your everyday snacks.. maybe for your kids, you need to make it a little sweeter lah.. but for adults no need so sweet, keep it sourish sweet then will be more appetizing..

    2. hmmm, as usual your kids always doesn't know how to "yan seung" your baking, but i have no doubt with your "hungry ghosts" colleagues lah.. next time if you are coming to KL, or Yannie is coming, you can bring the lemon cheese cake for the HHBC.. sure we all will love it, instantly hampus everything on the spot!! hahaha~~

  14. Not a fan of such cakes. Loved them so much once...but ate too much till now I would not mind if I never ate them again. Like how I loved mille crepes - now kind of put off by it already...

  15. Lena is one of nicest people I known. She is generous and unpretentious. When I last visited Ipoh, she offered to accomodate me and my friend. Awesome host! Oh and a great cook, her sweet spicy crab!! DELICIOUS!! If I have the opportunity to visit Taiping someday, I will sure drop by to visit all the sweet ladies in Taiping. Nice looking cake.
